- 2 cups all-purpose flour
- 1 cups cold unsalted butter (2 sticks), cut into small cubes
- 3/4 cup 3/4 cold milk or buttermilk
Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
Place flour in a large mixing bowl.
Add the cold, cubed butter to the flour.
Using a pastry cutter or fork, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces
Gradually add the cold milk or buttermilk, stirring gently until just combined. Do not overmix.
Turn the dough onto a lightly floured surface.
Gently pat the dough into a 1-inch thick rectangle.
Fold the dough 3-4 times to create layers for flaky biscuits.
Pat to a final thickness of about 1 inch.
Using a biscuit cutter, cut rounds without twisting the cutter (twisting seals the edges and prevents rising).
Place biscuits close together on the prepared baking sheet for higher rise.
Bake for 12-15 minutes until the tops are golden brown.
Remove from the oven and let rest for 2-3 minutes on the baking sheet.
Transfer to a wire rack and serve warm.
